International waffle day!


Lovely waffles with butter, goat cheese,stirred strawberries and sour cream

Made sour cream waffles today
6 eggs 
One box sour cream
3 ts physillium
4 ts sourdough powder
1 dl almond flour
100 grams of butter
2 tsp cardemom 
4 ts shredded coconut
3 ts flax seeds
And about 1/2 dl coconut flour


One happy kid getting this for his dinner tonight



Also made some jam, frozen strawberries warmed and mashed with some xylitol and coconut oil. 
First time I've done this and I will for sure do it again. Jam with no sugar or artificial sweeteners. 

Xylitol is an awesome sweetener btw, it does not have that weird after taste and is sweet as sugar. I even ate some waffle hearts with only xylitol. Just like I'm used to getting waffles served in Norway. 
( now what I read on the box after was that it can be laxative... So guess I'll just have to wait and see how much is too much ;p )

Well since I am not working anymore I might as well do something useful. Relax and enjoy the sunshine.

Kinda hard as this belly is 22 days from its due date and I have the most active baby ever. 

Time to just enjoy the last part of pregnancy

Eating turtles?



This weekend my dad and Eric had fun cooking. I was not allowed to see what was going on until dinner was served 


They had made thick burgers wrapped in lots of bacon with hotdogs used as legs, head and tail. Too funny

The next day we used the leftover turtles as bread and filled it with the stuff you would normally put inside a burger. 






Donair salad

Been craving this again for a while. 
Eric's lovely donair chicken. 
Feel like I ate a bit too much, but all good stuff so yum!

Make your own salad with kids. Baby bump

Today after a weekend away with treats, we start back on track. 
So wanted to try out this thing that Eric and I did, where we just cut up a whole bunch of veggies some fruit too. Nuts and seeds. Some different meats. Different leafy greens. Cheese. Eggs
And let the kid make his own salad. 
We had 20 ingredients. I was quite impressed with Jonas' selection. He had lots. And when it was time for desert he ate lots there too. Desert was strawberries, blueberries and banana in cream! Yum! 
Feeling satisfied. 

Also had my doula here today for a nice relaxing massage and some birth preparation. I wish I had a doula thru my first pregnancy/birth
It's so helpful. And feels more relaxed 

It's getting closer to due date now so lots to do and think about

Liver testing


Liver wurst with cream cheese on cucumber.
Still struggle eating liver. So got told to try liver wurst with cream cheese. It was ok for me to eat. So I'll continue with that :)
Kiddo liked it too :)

Make your own salad night


Salad green leave mix, eggs, tuna, feta cheese, avocado, cucumber, walnuts, olives, pepper, ham, tomatoes


Easy enough to cut up a bunch of stuff and then just mix in what ever you want. 
Eric made his tuna into a tuna salad
So tuna mixed with mayo, mustard and pickles. Not my favorite  so I just did regular tuna. 

Gonna try this with Jonas one day as he likes salad :)

Trout with cauliflower rice in bacon fat


One thing I haven't made in a while is cauliflower rice. 
Made it in baconfat with onions
Some fresh parsley
Have desided to try to add more freas herbs to our diet.
Trout made in the oven on 175 Celsius 
Easy dinner made in 45 min

Breakfast smoothie




So what did I put in here....
Good thing about smoothies is that you can trick kids to eat pretty much anything.
Here we have: 
Strawberries
Raspberries 
Banana
Kiwi
Honey
Agave
Vanilla powder ( not sugar )
Physillium
Crushed flax seeds
Spinach 
One egg
Some oats
Cocoa powder 
And almond flour

So there lots of things 
And as the top picture shows Jonas is getting every single drop out

Breakfast sandwich


Need a healthy breakfast sandwich?
