Lunch and dinner

Lunch today had some tuna with avocado, an egg and tomatoes quick and easy

Dinner picked up chicken at spar. They are on for 30kr now and threw down veggies in a pan with butter and some seasoning salt. Little salad on the side too

All so simple and so good for you ;)

Mango/coconut chicken

Ground chicken with cauliflower, broccoli, carrots, mango and shredded coconut. And all boiled in coconut milk and curry.
Mango was not my favorite part here but Jonas loved it :D

Jonas and I also had fun with finger painting today

Eric trying out my coconut curry dish

Can gluten make me grumpy?

Well as you all know I have been off gluten for a long period now.
This morning at breakfast I felt like having some lefse ( a Norwegian flat but soft bread, really thin and made our of potatoes and wheat flour) My grandmother and me made a whole bunch before x-mas as this is a Norwegian x-mas tradition and I wanted to learn how to make this before....

A short time after being done eating, I found my self extremely irritable.
Maybe I could be PMS'ing but after starting to learn so much about food I find that my body reacts in different ways all depending on what kinda food I have had.
Like if I eat sugar. Like candy/chocolate. I start itching all over my body and it is so bothersome that it makes me stay away from sugar as much as i can.

So therefore back to my question can gluten make me grumpy ?
Any good answeres?

Had visitors from Melhus today.
So we made them Asian lettuce wraps and they loved them:)
Add what ever veggies you want
We had peppers, ginger, garlic and onions
And zucchinis on the side:)

Great day

After a nice sunny day up in Vangslia Snowboarding we went and got fresh ingredients and made a wicked oven baked salmon with dill, butter a bit of sour cream and lemon

Veggies:
Onion yellow, red and chalotts
Garlic
Orange, green, red and yellow peppers
Broccoli
Carrots

In lots of olive oil and salt

Marshes cauliflower and carrots with butter

A glass of red wine was appropriate after a nice day like that too

One month update.

Let's go caveman style



Well here it comes, a few days delayed but life is busy

After one month on paleo the biggest change is of course for Eric.
He has lost 4kg (about 8-10lbs). He was not to happy about that, he wanted it to be more, but that is a really healthy weightloss. The kind that is easier to keep off.

I am still exactly the same weight 62.4 kg for those who say I have lost to much weight and look skinny. Muscle does that.

For most of the time Eric has managed to keep his exercise plan, but traveling and finishing the house has at times been a bit too much and exercise has been on the bottom of the list at times.
He is now discovering the fun of cross country skiing, which is probably gonna help him loose a bit more over the next month.

I have to say I am really impressed how well he has been doing and how much more in tuned with his own body he has become. As I have over the past year.

His 100's he stared out only being able to do 25 in a row and he is now doing about 50.
Squats and sit ups are easier :p

We are both putting lots of time into cooking both by our selfs and together.
Jonas is eating everything we are. He is still getting others stuff in barnehagen and he is super happy and healthy.

I had a doctor test done. Blood work to check up on everything. Super healthy as well !
One thing tho... Big surprise... People have been telling me to eat meat... So I can get iron.
And that I'm probably anemic.... Well news flash I have to much iron. But as the doctor said that more of a luxus problem.
For those who are telling me that eating high fat (healthy fat as cocnut oil and butter) and eggs are bad for my cholesterol. One more thing that was perfect ! So haha
How every I did start eating meat again. Not a lot but once in a while. It's still not my favourite, but I guess if I want to go caveman style thats the way to do it ;)


You use cholesterol to make vitamins D and also to make bile to break down fats. Every cell in your body makes and uses cholesterol and it is essential for brain function etc. so eating it is nessesary
Also make sure you're getting enough fat if you go low-carb and you don't get enough fact that you never get rid of the cravings and replace it with too much protein which can also be fattening
If you are missing any nutrients including things like Fat-soluble vitamins or minerals it can cause you to crave lots of food when you really only need that one thing that you are missing.

Not a big change. But my body is feeling good AND in one year it is a huge change. 15kg are gone, fat loss and muscle gain :) Im happy
Have a cool thing I am doing in March, a surprise, and for this I have to keep working on my body. So stayed tuned :)

Bought a whole chicken today
Made some guacamole
Had ruccola salat and carrots and broccoli.
Had a bit of sour cream on today. Mostly of dairy but once in a while I like it as a treat.

Deer and elk!

Eric went to Sundalsøra this weekend and when he came home he had deer, elk and chicken with him home. Hunted by Inge...
So made that with lots of onions of different kinds, peppers, carrots, a couple of potatoes was in there too... And brusselsprouts.
First wild meat I've ever had in my life. And I loved it:)

Mother's Day

So today I got to sleep in, in an empty house. Walked up to the top of the mountain behind our house. Took me over an hour to get up and about 5 minutes to ride my snowboard back down. Cleaned the house before my two boys came back home awesome beef lettuce wraps. And also skyped with someone I really miss. Been a good day :)
