Home made Liverwurst

So today has been a busy, getting back into normal days I guess.
Eric stared norwegian school today. My big school boy :P

Jonas biked and I walked with the stroller into town today. 7km impressed with the little dude
How ever after our dinner and pumpkin carving party with friends he was totally bagged and was begging to go home because he wanted to go to sleep.

So yesterday I got delivered at my door, liver from 3 deer, shot yesterday. Cant get much fresher then that.

So today I wanted to try to make liverwurst
I found a couple of recipes and mixed them together and made it kinda my own.

First I fried up onions with bacon fat
Also added some garlic an different spices
(thyme, rosemary, salt, pepper, paprika were the main ones)


Then I added the bacon






Then the liver



Yesterday I was so lucky to get to borrow the neighbours kitchen machine. So put it all in there and blend till smooth




Then put it in a water pan in the oven for 45 minutes to bake










A picture from our pumpkin carving night, nice to meet up with other people to do this, when it's their tradition too. Eric really misses halloween stuff


Took out all the seeds and now they are in the dehydrator with some seasoning on them



Also made apple bits with cinnamon today


And got milk from the farm.

We sure are lucky

First food for baby

Baby food

Just an idea if you didn't already know. 
Blend your baby food in a blender, freeze in an ice cube tray, break up and put in a bag. Perfect little meals when you first start baby on foods. 

Lamb liver and avocado is the first food Johan got, first avocado for a few days then I added liver.
He now also get banana. And that is his favorite

Paleo cures food phobias

So now that I'm starting the littlest one on foods, its all about food quality for his little tummy, and what to introduce

Seeing as I could get fresh lamb liver here, I decided to give it  a try.... (again)
Hey, maybe lamb will be a bit different that veal

So after making baby food I had to make something for us too
Here is what I did:

Marinated the liver in paprika, thyme, salt, pepper, parsley and olive oil (plus a scandinavian forest spice)

Lots of butter and onions in a pan until soft, put in the liver until browned, then I had a huge lamb burger that I cooked up and threw in there as well

Put in some garlic

A bit of milk from the farm

Two scoops of sour cream
(again yes we are mostly primal, but if you are 100% paleo or AIP just skip the stuff your body can't have)

Boiled some broccoli till its bright green but still crispy ( I peel the stem and use that too )

Fry up some bacon bits till nice and crispy
(pour the bacon fat into the pan)

Then cut up some mushrooms

Put the mushrooms in, stir it good, then put the broccoli on top and let it sit for a few minutes.

Use these minutes for something fun :) Having fun while cooking is always a good thing :)

And serve the dish on a bed of rucola, and "sprinkle" the bacon bits on top.







So what I mean about food phobias, it that the most of these things I would refuse to eat for some reason.... Now after eating clean, my tastebuds have totally changed. It's awesome because I now WANT to eat whats good for me and I'm no longer craving the junk

Onions I would not eat because they felt funny in my mouth when I was a kid

Mushrooms I ate for the first time today as it was a small amount and they had been cooked in everything, I still don't like eating just mushrooms and the smell even bugs me

Liver was just torture when I got it served, oh probably 5 to 10 times in my life time
Still something I'm working on but today was a very positive experience with it

Lamb was just a no no as no one in my family would touch it, so I just grew up learning that lamb and sheep was a gross taste, well sheep can be a bit particular, but lamb....baah tastes so good.

And also milk from a farm was something I would not do, because somewhere we went to visit when we were kids, would give us milk from the farm. 
But it had been out the kitchen counter and warm so to me that was disgusting.... Well that was just a mistake from them, because you can not get better milk than ice-cold farm milk

So things have changed

Getting back into it



Well we have been back in Norway for over a week now things are starting to get back to normal.
It's been a interesting week. Tired kids, tired parents.
But now it's time to start life again.
Tomorrow Jonas goes back to Barnehagen, he is really exited and does not quite agree on not having his 4 days a week back yet. Had a playdate there for a few hours last week. 
He had so much fun and was so happy to be there again. Think the kids were quite content to see him again too. And maybe the teachers as well.

So today I had to do some food prep. Made coconut flour waffles from 
I found them a bit too dry might try to add some banana next time.
But the good thing is that they taste good, will probably freeze well, does not crumble or stick in the waffle iron. So over all I'm satisfied with the result. But some goat cheese on there and voila :)
Or Jonas will probably want peanut butter and banana



This picture is a bit upside down, don't know how that happen, but its fresh milk from the farm and lamp liver. Liver is straight from the butcher, fresh today....
 Starting Johan on food this week so his first meat introduction will be lamb liver. After testing the liquid avocado breast milk combo he cot today.
Think this kid was very ready for food. He kept opening his mouth for the spoon and making a funny face.
The past couple of weeks he has been showing a lot of interest when we are eating, I just didn't want to start him on solids before switching time zones and messing up his routine.

Jonas also got to try to feed his little brother, we all laughed a lot :)

We made pea soup today, with salted pork. I have to say that this is one of my favourite soups, know peas are not high up on the food rank in paleo but more in what you can call the fray area. 
I like to go over to the grey area and the primal, just because everyone in my family can eat it, and it cut's us some slack and gives us more options
How ever all clean food :)



Norway is starting to feel like home again, still miss Canada like crazy (!) But as Eric is putting it we have a mission here. 
Life here is good to us.
