Baked chicken
This turned out really good, put butter in the bottom with kale, then some weird looking carrots, purple, yellow and orange. ( wondering how they r made, natural or not??)
Then some yams and onions before I put the chicken with bacon on top. Added some water in the bottom so the veggies get steamed.

Fish soup
Veggies:
Carrots
Rutabaga
Broccoli
Cauliflower
Charlots
Onions
Zucchini
Pepper
Lemon
Fish:
Trout
Prawns
Cod
And dairy and gluten free salmon burgers
Stock:
Fish broth from the freezer
Bacon fat
Broth from what came out of my butter/garlic prawns that I made yesterday
Coconut milk
Herbs and spices:
Basil
Nutmeg
Salt
Pepper
To finish it I made some crispy bacon bits to sprinkle on top
And I have to say this soup was pretty damn good!
Try to save stuff like bacon fat ( NO its not gonna kill you! )
Broth from fish when you boils fish.
If you ever prepare the whole fish, where you have to gut it and cut its head off. Boil that shit up, feed your cats ( if you have any, mine love me )
And you have a very nutritious stock. Freeze it and save it for your fish soup.
Yum!

They won't always want to eat what you would like them to eat.
Keep trying to give it tho, in the end you might succeed.
Jonas has not been wanting to eat avocado or zucchini AT ALL!
Today I made a delicious fish soup ( that I will blog about later )
I put tiny pieces of zucchini in it.
When it was time to eat Jonas looked over on then kitchen counter and saw the avocados. Then he said Mommy I want avocado in my soup. I was shocked. The other day I told him to try my avocado, just to try it again he might like it now. He had two bites then said he liked it but did not want anymore.
But today in the soup he ate half an avocado. Avocado being scooped out first.
So I'm pretty happy about that. Not everything will be a success but I think it's important to keep on trying.
Instead of giving in when they don't want their food and giving them a piece of bread with peanut butter. Because it was easier.... That's not teaching the kid anything.
Try again. Try different ways.

Breakfast with grandparents
This morning Eric made us a wonderful breakfast. Paleo for us that what to stick paleo and other stuff for the old timers ;)
Not always easy to get everyone to understand the paleo way. But everyone is happy.
This is the fist time my grandparents from Kvam have been up here. Nice to have them here:)

Leftover omelet
Why not use your left overs in an omelet?
Eric put the trout, the carrots and brussel sprouts in the eggs making a wicked breakfast.
Chicken and guacamole
Last night I made chicken and guacamole with a small salad on the side.
Left the chicken marinating al day in some olive oil and seasoning

Dandelion trout
Trout is probably my favorite fish ever!
When Jonas and I walked back from the farm today we picked some dandelions and put them on the fish.
Why not eat something you can pick so easily and it's so good for you too.

Jonas' pick
So he said fish. I asked what kind of fish. He said red fish. So either salmon or trout.
Went to the grocery store to pick up fresh trout. As I'm getting it Jonas is like -No mommy I want that one. A whole mackerel! So we packed up the mackerel as well and went home to cook. Cats were pretty happy too. I boil up everything I cut/gut from the fish for the cats. They love it.
So today's dinner decided by Jonas was mackerel, broccoli, carrots and salad both a green salad and cucumber salad ( that I mix with lemon, salt, pepper and olive oil.

Zucchini lasagna
Today's cooking experiment.
Browned meat, added one onion, 3 garlic, one red pepper and olives.
Used tomato sauce
Oregano, parsley and fresh basil
Layered with zucchini cut with a cheese slicer.
Made it primal as I added cottage cheese and some Norvegia cheese on top.
Eric loved it, Jonas said he did not like it but ended up eating his whole plate ( almost )
So this was a hit :) and very easy to make paleo too. Just don't add the cheese. Maybe sprinkle some grated cauliflower soaked in olive oil and some spices :)

Blueberry picking
Jonas and I hiked up the mountain today and picked about 4l of blueberries:)

Veggies and dip

Today's challenge, open a can of tuna
Opening a can of tuna with one hand is kinda hard.
But I did finally get my tuna salad.
Mixed greens, two eggs, one can of tuna, nuts and seed mix and a sprinkle of dried chili.
My dinner when I'm home alone :)
Fish/cod

One layer of cheese and my "bread crumbs" shredded cauliflower with a spoon of olive oil and seasoning salt.

3 banana breads. Food saving
But still a lot that can be done with one hand.
So today Jonas and I made banana bread.
One I made just the way the recipe says ( except the chocolate ), one I added dried berries, sunflower seeds and cinnamon, the third one I added pecans, cocoa powder and shredded coconut
For the bananas I went to one of my local stores and asked if I could have old bananas that they throw away. And the lady was very nice and gave me lots.
Idea for the rest of you too. Too much food is being thrown away. And it's kinda silly to buy new bananas and wait for them to get old so I can bake with them.
Saving money and less food waste!

Ingredients
- ½ cup coconut flour
- ½ cup almond flour
- 1 cup very ripe banana mashed well with a fork (2-3 medium bananas)
- ½ cup butter melted + extra butter unmelted for greasing (preferably grass-fed or you could sub with coconut oil but it’s way better with butter)
- ¼ cup cacao nibs
- ½ teaspoon cinnamon
- ¾ teaspoon baking soda
- ¼ teaspoon no additive liquid stevia or ¼ cup honey (can increase honey all the way up to ⅓ cup of honey or ½ teaspoon of liquid stevia but I wouldn’t recommend going above ⅓ cup of honey or ½ teaspoon liquid stevia in terms of sweetness)
- 4 eggs
- ½ teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the oven to 350 degrees and grease a 8.5 x 4.5 loaf pan with butter and place a cut bit of parchment paper that fits in the bottom of the loaf pan inside it flat on the bottom.
- In a medium sized bowl combine the coconut flour, almond flour, cinnamon, baking soda, cacao nibs, and pinch of salt and mix with a fork to reduce any clumps until thoroughly combined.
- In a small bowl add eggs, vanilla extract, stevia or honey and whisk then add mashed banana to the egg mixture and whisk more until well combined.
- Pour the liquid ingredients into the dry and stir with a spoon until thoroughly combined then add melted butter and continue stirring until well incorporated.
- Spoon all of the bater in your greased loaf pan and spread it out evenly with a scraper and shape it in any way you want (specifically in the shape of a loaf so that it rises like that)
- Place in the oven for 40-45 minutes or until the center is pierced with a toothpick and the toothpick comes out clean.
- Pull out of the oven and let it cool slightly (only for a minute or so) then carefully run a knife along the edges to make sure nothing is sticking and cautiously invert it onto your hand or a wire rack and flip it so the bottom is laying flat on the wire rack and let it cool for 20-30 minutes. (if you can wait that long)
Notes
Update: for those of you who have had runny batter I believe it has to do with the brand of coconut flour, I think that Bobs Red Mill Organic Coconut Flour is slightly more absorbent than some of the other brands. This is amazing sliced and toasted with butter in a pan. Just turn a pan to medium heat and add a butter pat to the pan and let it melt slightly then add the bread and swirl it around on both sides until it’s toasted to your liking. Crisy-edged, warm and buttery goodness.
