Yoghurts and added sugar.

I've started "making" my own yoghurt  for Jonas
I buy Greek yoghurt that has no sugar added. I add honey and vanilla powder as a basic to make it sweeter. Important to get vanilla powder not vanilla sugar.
Then I add some berries, always nice to keep some frozen berries in the freezer :)
And I think Jonas is enjoying deciding what he wants in his yoghurt everyday

Blog 300, 50 days till due date, paleo kids

So I've written 300 blogs since I started, almost 20000 visits to my page. Not huge when u think about the big bloggers, but still pretty cool for me. I'm learning what kinda blogging get most visits and not.
I'm learning so much about food and the body.
I've been to my first seminar that I loved.
I'm growing a paleo/primal baby and raising a paleo/primal kid

And what does he eat?
How do I do this with a child, so many people ask.
Well simple.... Kids adapt! Easier than you.
So if that's your problem I don't find it that a very hard one to solve.
Yes maybe the first little while the kid will be unhappy with what he is getting served. But when not given any other options they soon eat. Important with every meal tho is to have options not just fish and carrots, or just broccoli. As they might not like that right now but eat maybe 2 to 3 veggetBles out of the 5-6 you made. And keep serving the ones they that day say they don't like. Because tomorrow they might say the opposite. Let them be involved in the cooking. Or if you are ok with your kid getting some tv time, I often let this time happen when I'm cooking. Gives me time to cook without a hungry and grumpy kid at my feet. And if they don't get to watch tv all the time, this time will be appreciated. It's nice to have time to cook :)

Here is what Jonas ate today, deer, peas, carrots, brusselsprouts, salad and he tried a whole carlic that we made with the meat. But did not like that one. How ever he will eat garlic when it's in a stir or stirfry. So also keep trying the same food in different dishes in different ways.

50 days left little kicker!

Wheat, weightloss and bipolar disorder

This is a picture of a lady that walked into my salon about one year ago. I did a small post about her earlier in my blog to. Now she has written me a little update from how she is doing now. One year after slowly cutting out wheat, starches and sugar.

Here is what she is saying:

Here is a picture of my favorite skirt, it's now useless. I used to use it several times a week but no more.
I suffer from bipolar disorder and after I stopped eating wheat my mood is a lot more stabile.
There was a period I treated my self a piece of toast on Sundays, because it had been so good all week. Soon I learned this was not a prize, for a while I was wondering why I felt so depressed on Sunday nights, I've never been a person that's not looking forward to a new week.
But then it became clear, just gotta stop that breakfast!
I have way less mood swings and I'm convinced that this lifestyle/diet has so much more to say for my illness than I could ever imagine before I became conscious on it and changer my diet.
An other positive thing is that my sugar cravings, like chips and so on are way smaller. Some weekend I buy sweets just from an old habit, but it can stay in my pantry for weeks because I just don't feel like it.

She also adds that she is still "just" down 13 kg, but has given up on the scale as the tape measure is showing results and week by week she notice the changes in her body. So that's way more fun.

It's fun for me to see results in people that I speak to, and it feels good to somewhat have been able to help people feel better.

Proud of you lady! Keep up the good work.

175 Celsius , new knowledge

An other thing I learned yesterday was to noot cook/bake anything over 175 Celsius.
Kills a lot of the nutrition in the food and there was something else too that I can't quite remember.
So today I did that. Took a little longer but the food was delicious :)
Made chicken fingers, breaded with almond flour with spices and herbs
Baked sweet potatoes and a couple if potatoes we had leftover.
A nice big salad with baby spinach, romane hearts, broccoli, blueberries and avocado. Dresses with olive oil and balsamic and full fat sour cream.
I love chicken fingers made this way

Kiddo's breakfast

Little bit of everything.
One banana pancake with coconut flour and almond flower
Almond butter, honey and blueberries on
Pepper, olives, cucumber and one prune
Two nice thick slices of sausage and a nice glass of farm milk.
All gona and one happy kid.

Talk/lecture with Berit Nordstrand

On Monday when I went into my gym to freeze my me membership as the pregnancy is telling me to stop the harder workouts now.
I saw a poster about this talk at the local hotel, oh interesting.
Finally someone who is a doctor who focuses on the food before filling people with medicine.
So nice to listen to someone talk about food as passionate as I am about how I eat, and how I want to feed my family. Someone with a degree and years with this that is telling people yes you need to eat fat, illnesses are often caused by food intolerances. And you can eat your way in to a healthier and happier life.
I know a lot of people look at me funny when I talk about food.
Trying to have my kid have a healthy diet, but having him in a barnehage that have a very different view.
Margarine on bread, extra skimmed milk with added vitamin-D.
Yes we need extra vitamin D, but our kids need fat, for their brains development. And also kids are outside several hours a day, and need less added compared to a grown up in an office job.
Oatmeal for lunches, yes ok.... Our old traditional oatmeal... But this also spikes our insulin levels.
So does the bread they get for breakfast, and all the sugar in yoghurt and yoghurt drinks.
I was very happy when she said that giving your kid biola ( a yoghurt drink here in Norway, that also gets it's added fiber from corn :( )with breakfast is the same sugar amount as pop.
Think about that one.
Kids are often on a sugar high to crash for a new sugar high to a new crash over and over again none day.
Can cause insulin resistance to type 2 diabetes.
Anyways enough about that for now, but I do believe we really need to help our kids into a heathier lifestyle.

So thank you Berit for a wicked speech, hope I can help spread your word more.
Looking forward to read your book as I was just done an other book and was looking for something new to read

Now to my project of the day, Jonas asked for kombucha today out of the blue. So decided to pick that up again. Been thinking about it for a while, but I think I just over did the kombucha for a while and got tired of it. Silly me :(
So a couple of weeks now it will be all ready.
Back to fermented foods.

Now sitting and reflecting about all the stuff I heard tonight.
With a cup of warm fresh milk from the farm and honey.
Yum!

Life Trondheim Torg- today's catch

After "meeting" our baby boy at the hospital in Trondheim ( everything is looking good )
I went for a little shopping round while Eric had a meeting.
And of course I have to stop by the health food stores.
This time at Life at TrondheimTorg.
Meet two great and very helpful ladies there.

This is my purchase of the day:
Xylitol as I'm finding the that the stevia is leaving a little bit of a taste that I don't always enjoy.
Nãkd bars, lovely raw bars with 3-5 ingredients depending on the bar
Cocosa with orange flavor, gonna try that in my coffee or tea and probably make some chocolate too
Peanut butter and almond butter
Some Saturday treats, gluten free and all natural sweeteners.

Also now if you enter a life store and say life 20 years you get vitamin D supplement for free.

Vitamin D is very important and a lot of people are low due to little outside time.

Vitamin D is a group of fat-soluble secosteroids responsible for enhancing intestinal absorption of calciumironmagnesiumphosphate and zinc. In humans, the most important compounds in this group are vitamin D3 (also known as cholecalciferol) and vitamin D2 (ergocalciferol).[1] Cholecalciferol and ergocalciferol can be ingested from the diet and from supplements.[1][2][3] The body can also synthesize vitamin D (specifically cholecalciferol) in the skin, from cholesterol, when sun exposure is adequate (hence its nickname, the "sunshine vitamin").

Got milk?

If you have a farm close by you should go ask if you can buy milk from the tank from them.
Lots of farmers have too much milk and will have to dump it or sell it for nothing.
The milk is so good!

Today we had cod for dinner with crash farm milk:) YUM!

Breakfast muffins

Eric and Jonas made these wicked breakfast muffins this morning

Butter the muffin tray
Fry up bacon till almost crispy
Layer the muffin tray,
Crack an egg into it

Eric used my leftover pancakes in the bottom giving it that little extra YUM!

Jonas' birthday cake

So trying to make a paleo pound cake I came across this recipet. On the link below. I found it got to dry so I added cream (so it went primal) till I was happy with the texture. Not runny

wet and also not a dough

Put it in a creased pan and left it in the oven for about one hour.

Made a chocolate buttercream for the middle and around the underlayer.

1 block of better,

6tsp of cocoa powder

2tsp of vanilla extract

1/2 cup of maple syrup

For the top I made cream cheese frosting. Used cream cheese from goat this time

2 boxes cream cheese

1 block of butter

1/2cup maple syrup

And vanilla extra to taste

Think a little man will be very happy tomorrow.

He asked for a strawberry cake so I think this angry bird crazy kid of mine will love this one.

And as it is paleo-primal I don't feel any guilty letting this cake be his breakfast.

For his birthday lunch in  barnehagen he will have one if the egg muffins him and daddy made for breakfast today

Then for his birthday dinner he wants pizza. So now.... Looking into paleo pizza crusts

Chicken fingers

Made chicken fingers today

Breaded with almond flour and spices

Super easy to make

Egg in one bown

Almond flour and spices in an other bowl I just used an all seasoning and paprika
But you can make them any flavour you might want

But then in the own on 220c for about 8 min on each side. Cut one of the thickest one to see if done. Mine needed 3 extra minutes, but took out a couple that were already done to cool of on Jonas' plate

Made some potatoes for a weekend carb treat. Pretty much low carb all week. But in weekends I treat my self with some carbs and dairy
Little kicker seems happy in my belly too

Cut up some fresh veggies to have on the side.

Bought a new book today Clean, Natural and Homemade food. For happy and calm children
Will be interesting :)
I'll tell later how it was

Pancake breakfast

Made these paleo coconut pancakes this morning, huge hit with the whole family :)

4 eggs
1/2 cup coconut flour
1tsp baking soda
1 pinch of salt
1tsp honey
2 tsp of vanilla extract
1/2 cup coconut milk

If the batter is to thick add more milk
Or too liquid add more flour
It's not suppose to be runny like regular pancake batter, but also not a dough

Dressed it with butter, maple syrup, bananas and blueberry jam (Home made from what Jonas and I picked this fall)

This is so delicious!!

Made extras so I can send them to barnehagen (preschool) with Jonas for lunch.
