Pizza night and home made chocolate treats


Yesterday me and the boys had a really nice day. 
Started out with making chocolate treats.
Melted cocosa and 86% chocoloate. And then I added honey and vanilla into it
A little bit of himmalayan sea salt (the best)
Crushed raw cashews, walnuts and pecans. Last thing I added was the shredded coconut, then I can kind of control the texture. 

While this was cooling down we biked to Vognilsbua for a little saturday treat. Jonas is becoming such a good biker now. Went there all by him self. A little bit jealous that his little brother gets so it in the vagon on the way back up the hill. 

Then they played outside for a little while I prepped the pizza stuff. 
I bought one of those pizza rocks a little while ago. A really good idea. I managed to get cripsy pizza "dough". Using almond flour, coconut flour, eggs, olive oil and jyttemel (don't know what that is in english ) I also added oregano for the pizza taste.
Jonas and I made one half each. He is turning into such a little food helper. 
Johan was not sure about the pizza just yet. I love his interest in foods now. And he is already Making choices on what he likes or not when he gets different foods in front of him. 
He will always pick out the meat first. When he get food food. If he sees a banana or a prune he will let me know that that is what he wants. So neat to see nature in kids. It's human to choose the sweet because it tastes good. But if these objects are in front of us we will eat them. If they are not there, we will go for whats most nutritious. Well this is not how it is for all kids. Jonas and Johan are very different. Jonas will eat veggies first. It's a bit sad that I don't remember how Jonas was with food when he was little like that, because I had not yet adapted this lifestyle. 
3 years since this journey started now. Crazy how time flies! 
Have learned so much, so much more to learn.

An other success, Jonas calls it bacon cake ( Bacon Rullekake )


But some plastic in a pan, put down bacon, on that you put ground meat, here I used ground chicken, put spices in with the meat. I use smoked paprika, turmeric, salt, pepper, garlic and cumin
On top of that again I put nice thich slices of Goat Cheese.



With help from the plastic you roll it up. Like rolling sushi. Then remove the plastic before putting it in the oven 


175 c until bacon gets a nice crispy side, then turn until the other side is the same.  About 45 min to 1 hour.


Served with some nice veggies. Balsamic and olive oil and I now add MCT oil to that too. If you haven't tried MCT and are into the whole health life style you should look into it. I have blogged about it before so look it up. It's super!



Super nice dinner with my little dudes! Jonas helped him self with the meat 3 times! He almost never goes for seconds at dinner, specially not meat! 
So meat and cheese wrapped in bacon it is.
Johan will happily eat anything at this point. Hoping that will last, but kids...they change :P
Have to make this for Eric when he comes home. We all miss him.

It is not always easy to make the kids eat veggies.... 
My boys will eat pretty much anything now, but thats because they are used to it. If there is anything they won't eat I still manage to sometimes hide stuff in other food. Really parents it is not that hard to get kids to eat proper. Kids will not starve them selfs. And they will eat what they get served, if you give them the right options. 
So what was my big hit today?
Spagetti made from sweet potatoes and carrots.


Used my peeler to string the noodles


Pre boiled them a bit


Made a good sauce, this is where you can hide veggies. Cut them really small, or puree stuff in the beginning until they get used to the taste. Here I put onions and tomatoes that Jonas will normally not eat. But now that they are cut small ( I no longer need puree stuff ) and he won't notice and he ate all his food and seconds too. When I am done stringing noodles there are always small pieces left so i cut that up and put in too


You can boil some extra veggies on the side, veggies that your kids like so that they also get the part that they are eating veggies. 
If you can eat dairy put some parmesan cheese on too :) And there you go Italia paleo food :)

The big waffle day!


Today we had waffles for dinner. 
It is the international waffle day!
My waffles are a bit different from your sunday waffles. 
Mine are made with coconut flour, almond fluor, eggs, banana, arrowroot flour, cardamom and salt. 
I love them and they are very filling, but one thing is for sure eating this as my MEAL for the day before doing tabata kettlebell might not have been the smartes move.
I had some chicken with it too. But I need way more food than that. Cool to getting to know my body in this way.  And so much more to learn. Can't wait to learn! Wonder where I will be in 10 years :)

Candle light lunch, 30 roses and kettlebell cupcakes

Oh yeah I"M 30!




Tina got up with the boys this morning and made me a breakfast muffin and coffee, 
both with pink cream!!
And presents too!!
Then Jonas went to barnehagen and the rest go us spent some hours in the sun,


Before Tina took me to lunch at Spisbar in Oppdal. Ate so much that I could not have dinner, but she had made me pink kettlebell cupcakes. Could not say no to this on my 30th!
Neighbour poped by with 30 roses and a present too. 
So thankful for all the wonderful people in my life. 
For Tina for making this day so super special 
For Eric making my day special two weeks ago as he is working his butt of being away in NYC
For my two wonderful boys giving their mamma unconditional love
For my family and friends making me feel loved

This evening of course, went to Kettlebell class no birthday day with out a good workout :)


My birthday present from Eric, from the underwater pregnancy photoshoot. What a cool thing to have done. I have to day I am quite content with the finished result :) 
Can't wait to get it up on the wall then the roof and upstairs is done :)

Birthday dinner with my family



Today we went back home for a visit. And ate food at Sinclair. It is so much easier when we all meet at some place. Even Gunn managed to come for a little visit. Super nice. 
Tina and I were down for an other secret mission too :)

Nice to have the family together again. Lot's of laughter too :)

Baking sweet potato muffins with my boy




Jonas and I desided to try to make some sweet potato muffins.
We also made a batch that had half of that and the. Added some blueberries into the mix to make them two colored. 
And as the picture shows Jonas got to lick the spoons after so now he has a blueberry face. 
I just mixed up a recipe my self today. They turned out really good, but maybe a bit on the moist side. Got to adjust that next time some how. 
Sweet potatoes are so versatile!

Up early in the morning, and one of the first things Jonas tells me every morning is that he is super hungry. He loves breakfast
This morning they got eggs and left over trout with some veggies. 
They both ate all their food. I love how easy it is to feed them. They will eat pretty much anything

Stretching it out after a busy day


Been a busy day, my back is feeling tired.
So then it's nice to take some time to stretch it out. Having a foam roller really helps. But you can also find other things to just bend over. Hood of the car works too. Or look it up on youtube. Feels great

Started out the day with dropping of both my boys in barnehagen. First day for Johan to be there by him self. 
Then thursday morning gym/therapy with Gudrun, doing some lifting. 
So good to have the workout done in the morning once a week. Then when work is done for the day, the evening is just for relax.
10-16 workday, good and busy work day with nice, happy clients

It's been a good day. 
Tina has picked up both the kids today, got dinner and made it too.
So nice!!! It's nice not to have to make dinner somedays. And today was one of those days. And food was needed. The day got very busy, and I didn't really take the time to eat after I had by bulletproof coffee with MCT. 
Gudrun was so nice to come over with a bar for me today at work to. That was really awesome and much needed. 
Feeling lucky to have such great people in my life. Specially now that Eric is away. Missing him lots.

Now I've been practicing braiding on Tina's hair for a job I'm doing for a wedding on saturday :)
Fun fun.

Now back to my tea, then sleep

Northen Light

Northern Lights were amazing tonight! Even had to go and wake Jonas up to see it. He was a bit confused but was looking and it in awe. I have wage memories of my mom waking me up when I was very young to see them too. Wonder if he will remember like I do. When He went back to bed I stayed out for an other half an hour and it was more then I have ever seen. It was beautiful, hypnotising and mesmerizing.

Who needs bread?

Sorry about the bad pictures, but I did not feel like decorating too much today. Other stuff to do on a sunday, but just wanted to share my breakfast with you all.
I use lettuce leaves just like bread. But what ever I would put on bread on it and guess what, it's not so bad. Haha. The only think that happens is that I end up eating a little bit more vegetables. Oh no!! Lol
Anyways why don't you try it some day. Nice thing to put on is avocado. Specially if you are one of those people that believe that fibre is why you eat bread. I used to be one of those people. Saying, but I need my fibre. Thats where I get it. Avocados are super high in fibre and healthy fat. 
Have some egg. Eggs are super easy to make people. Protein. 
So protein and fat. Two most important things! 
Oh and have a big glass of water.
In the morning before anything I always try to have two glasses. 
Drink before you get thirsty. 
Water is detox. No need for expensive detox stuff if you drink your water :P

Salami, cucumber and peppers. (also under I have goat spread cheese )

Eric is now off to present his game in New York with a course thru Innovation Norway. 
This is very exiting for our family. 
Before the course starts one of the goals was to get 1500 likes on their Facebook page. 
Eric is working with a team of students 
And a team of friends and contacts he made working at EA sports in Vancouver.

STIKKMENN goes to New York on a full tummy



Well there he goes. Of on a new adventure. Following his big dream. This is crazy
He asked for burgers for his last family dinner before he took of. 
So burgers he got. 
Lettuce Burgers with home made cheese, bacon, home made pickles and sweet potato fries.
One of my favourite foods. I had two! Yum Yum
Then Jonas and I took Eric to the train station. Plane leaves around 6 am tomorrow morning, be a long night at the airport. 
Exiting to see where this could take the game.

Making cheese/Drinking Whey

Making cheese!

Tina desided that we should try to make cheese! 
And this is how it turned out. That's just a plain one. But Tina now cut it all up and put it in marinade. Tasted one piece fried in butter. Very good

I also kept the whey. Tasted it too. Not bad at all. But keeping it to make gravy or soups. 
Hear it is very high in protein.

Lots of work to do the cheese today, or maybe not just the work, it's more the time. About 8 hours spent. But we might be faster next time.

Bullet Proof Coffee. Who does it? (150 more likes)


Sitting here with my morning coffee.
What do I put in it?
Oh you know, coffee, some real milk from the farm, butter and MCT oil?
Filling me up and giving me up and giving me a great start on the day.
If you want to try this coffee out, you should start slowly. (maybe one tea spoon of each, I now do 2 table spoons, but slow is best as it gets you bowels going...like really going if you have too much, or you will end up felling sick and puke. I have never pukes but talked to people that have) I also sometimes use cocoas in it. That is all I used for the first 2 1/2 years i've had pullet proof coffee (wow it's been a while since I got onto this lifestyle)
But after being introduced to MCT I find that that works better for my taste.

Eric is of to Trondheim today. With Jonas and 2 of the students he has working with him.
They are heading for the university to present some stuff there. Not sure if I can write what, as they probably want to post that stuff first on their STIKKMENN page.

New Game Coming soon.


Some of you might have already heard about it, most of you not.
STIKKMENN is the new game being made in Oppdal Norway
Eight Legged Steed
My lovely man Eric has come a long way into the creation of his game STIKKMENN
He works with local students and a professional tram in Vancouver.
From his old job at EA Sports
This week he takes off to present in NY with a course thru Innovation Norway.
One of the goals before going there was to get 1500 likes to the games Facebook page. 
We are almost there, but need about 300 more likes.

Cod is back


Cod to me is one of the most boring foods I get. But it's a fish that is not farmed and it's not too pricy. And I know it is very good for me. So when i was little our mom would always make fish-gratin.
I would be ok eating that, but it was of course with macaroni. So I'ce a couple of times now changed it up with a mash of some kind. Today I used cauliflower mashed with nutmeg, salt and pepper.
I made a nice sauce from butter and cream, with onion and red peppers.
Sprinkle the whole thing with parmagian. 
It's still pretty plain, but it's good food, and it also gives me leftovers for baby food. 
I have to add that into my meals these days. Make food that everyone can eat. And leftovers are always good as we are so busy these days.
Two more days and Eric takes off for almost 3 weeks in NY. 
So very exiting, but also stressful days. All good and all happy stuff.  If you haven't already please go on his Facebook page for STIKKMENN and like his game. Having 1500 likes for NY was one of the goals. We are almost there, but need that small extra boost. Please help us get it out there.

The New Game


Hello to all 
Wanted to do a little blog about my husbands new game. He is leaving for NY in two days to present it there. 
With good help from Oppdal and Innovation Norway, he has come a long way into the making and is getting closer and closer to making his dream reality.
How ever before he goes to NY one of his goals was to reach 1500 likes to his Facebook page.
