Carbs today!

Chicken breast
Rice and salad
With sauce made from coconut milk

In the coconut milk I added some veggies from yesterday's dinner.

Cut up the rest of the salad and cucumber and tomatoes for a salad

Homemade dressing from olive oil, balsamic vinegar and some pepper

To make the chicken good and juicy warm up olive oil in a frying pan. To check that the oil is hot enough use a wooden spoon, put it in the oil. If it bubbles/fries around the spoon the oil is hot enough. Throw the chicken breast in, make it light brown on each side, then turn the heat down and let it slow cook.
About 30 min. Keep turning
