Some Norwegian food

A kind of meatballs with sauerkraut and different veggies. I think it's important to have between 3 and 10 veggies at a meal. Then I can make sure Jonas always tries everything once and will at least eat half of the veggies. Sometimes he will eat one and sometimes he won't. Sometimes he says he likes it sometimes no. So that's why I keep making many so her keeps eating them all. Eric and I will always eat all anyways so there is no waste and really not much more work. And left overs are always good to pack up for lunch the next day. Or add some of the dinner in your kids breakfast or lunch. It's more exiting than just that same piece of bread with cheese on it...
Add less of the starchy food to keep your kids full longer and not spiking the insulin level with starches that turn into sugars....
Okay little speech in the there too.  
But might help people get more insight in the way I make my food chooses and understanding it a little better. 


Bit of a snow storm here today. All roads out of town were closed at some point of the day

Went to the midwife today. Baby is right where he should be. I'm over half way three and I can feel the little guy move quite often now.

Glutenfree potato lefse

Well as for today's challenge, trying to make the traditional Norwegian Christmas lefse gluten free.
Went with buckwheat flour and psyllium 
It was not easy to find a way to do it. It was too crumbley to make it as big as I did with wheatflour. 
So they ended up way smaller but surprisingly tasty.
Jonas helped me grind the potatoes or Bonke poteter as my grandma told me my dad would say when she did this when he was Jonas' age.
Fun to hear some stories. While trying to learn an old tradition. ( in a new way)


When we got home to Oppdal today there was a lot of fresh snow. When we left here 32 hours ago there was only 3-4 cm of snow....!!! This is Oppdal 


This is how much I made to freeze for our Julesylte that we made last weekend!!! Oh I can't wait for Xmas

Shipping arrived!!

Ordered this stuff about one week ago from iherb.com
All gluten free 
Mostly treats we miss from back home in Canada, but also stuff like cocnut flour, coconut water, cocnut cream. Dried seaweed with wasabi. Dried fruit snacks.
All organic too. And so much cheaper than Norway! 
Recommend page. Also vitamins and other stuff. Just make sure to read the ingredients, some stuff might actually not be as healthy as they seem with added flavoirs, preservatives, colorings, sweeteners and so on.

Tuna salad

Take one can of tuna or two add some kesam or mayo some pickles and salt and pepper

Make a nice and green salad 
I added mixed baby leafs, tomatoes, cucumber, avocado and feta cheese :)

Try to get the tuna in olive oil or in just water, seed oils are a no no.

Julesylte Norwegian X-mas food

Normally this would be made out of the meat that comes from the pigs head. Now it's more common that you use just pork or pork with a mix of other foods. 
I used pig, duck, chicken and beef
Layer it, put gelatin, salt and pepper between the layers
Give it a steam bath and press it over night

With all the boiling of the meat/bones comes delicious broth 
Lots of people will probably just throw this out but we freeze it in jars and reuse it for soup stock ( which Eric is preparing for this week with some of it) or to be used in gravies. 19 glass jars!

Made knekkebrød, flatbread from seeds and when I cut that up I got a lot of "breadcrumbs" that I also keep for later use. 

Pretty much everything can be reused in some way:) 

Been cooking and cleaning for about 10 hours today but it's so worth it.
Specially when there are two of us in the kitchen.

Eric made us a lovely dinner with the left over veggies from last night
Baked them in the oven with chicken breast.

We also got a nice walk in today with Jonas and went to the farm to get fresh milk!

Feeling happy and very lucky! 




Frøknekkebrød

125 grams of almonds ( grinded )
3 dl sunflower seeds
1 dl flaxseeds
1 dl sesame seeds 
2 tablespoons of psyllium powder
1 teaspoon salt 
5 dl water 

Stir it all together
Let it rest for 10 minutes
Put in on a bakinsheets on a tray spread till flat
Cut with a pizza wheel 
But one tray on the bottom of the stove and one on top after 35 min switch and leave it in for an other 35 minutes
Hot air
160 Celsius 
Cool down and break into pieces

In Norway it's Father's Day today. 
And I'm so lucky that I have my dad here and the dad of my kid(s)
Made eggs and bacon for breakfast
And fresh milk from the farm!!! Best!

Tuna salad and tomato mozzarella

Been wanting tuna salad for the last few days and now Im finally gonna eat it:)
And then I just put mozarella on tomatoes marinated in balsamic vinegar and olive oil with oregano, salt and pepper 

Yesterday I finally got to do some boxing again!
Thanks to the awesome, talented and lovely Ailen!!

That was so much fun and I now know how to count to ten ;)

Zucchini and eggplant lasagna


So many veggies! 
I used ground chicken
Browned it with onions and garlic and added some red peppers in the end. Used an approved pasta sauce in the meat

Veggies:
Carrots
Broccoli
Cauliflower 
Kale
Cabbage

All cut up nice and small and warmed up in chicken broth till a bit soft.
Then I layered it all with eggplant and zucchini 

On top I used grated cauliflower to give it that crisp. And added some green pesto to it too

Jonas loves this dish and I get to trick more veggies into him this way as it's all cut up so small ;) 

This dish can be alternated in so many ways you can add more veggies different meats and so on

Pork tenderloin

This is a very easy meal to make. 
Fry it quickly on each side till light brown and then put in the oven for about 20 minutes.
Cut up some greens while you wait. 
Voila dinner in 30 min 

Super easy and so tasty!

Serrano/prosciutto wrapped asparagus for dinner

I have totally been craving these for weeks! Finally we made it ;)
Let it all marinate in olive oil and balsamic vinegar. 
Put in the oven and wait for the deliciousness!!
